Research conducted in the United Kingdom and confirmed by the East Sussex Fire & Rescue service is that 70% of fires in commercial kitchens originate within faulty extract ventilation systems due to a build up of fat and grease deposits which can lead to a devastating loss of the business and risk to life, this can be significantly reduced by carrying out regular cleaning of the extraction system, the industry standard for this type of cleaning is outlined in the TR/19 guidance and should be completed by specialist contractors.

From experience we know that some extract ventilation ducting, especially older systems, cannot be accessed in their entirety allowing for grease and fatty deposits to build up in non-accessible areas, in turn this creates a risk that can go unnoticed, especially without the correct communication from the cleaning teams and a good understanding of the generated cleaning reports.
